The Truth About Cooking Oils

Not all oils are made the same and it matters more than you think.

Most refined oils are extracted using chemical solvents at high temperatures (above 200°C). In this process, natural nutrients like Vitamin E and antioxidants are lost, and the oil is often deodorised to remove odour and flavour.

Cold pressing is different.
Using only mechanical pressure and a traditional wooden press, the oil stays below 45°C preserving its natural nutrients, aroma, and character.

It takes 3 kg of groundnuts to make 1 litre of Sattva Origin oil. 

Cold pressing extracts only 20–25% oil from seeds compared to 35–40% in chemical extraction. The lower yield is the cost of keeping the process honest. Every bottle represents more seed, more time, more intention.

Nutrition Refined oil destroys up to 80% of Vitamin E before the bottle is sealed.

Vitamin E is heat-sensitive. Above 50°C it begins to degrade. At 200°C+ the temperature used in industrial deodorising  it is nearly eliminated entirely. Cold pressing never crosses this threshold.

Chemicals "Refined" means petroleum solvent extraction not a cleaner process.

Hexane, a petroleum byproduct, is used in most commercial oil extraction because it improves yield by 15–20%. It also destroys every heat-sensitive nutrient in the seed and can leave trace residues in the final product.

Aroma If your cooking oil has no smell, it has been chemically deodorised.

The warm, nutty fragrance of cold pressed groundnut oil is evidence of intact volatile compounds not burning oil. Refined oil removes these at 200–270°C. Sometimes synthetic fragrance is added back.

Clarity Crystal-clear oil has been bleached. Cloudy oil has not.

Natural cloudiness in cold pressed oil means nothing beneficial was removed through industrial filtration. Refined oil's uniform pale clarity comes from clay and acid bleaching, a process that strips phytosterols, polyphenols, and natural lecithin.

Cold pressed groundnut oil has a ~160°C smoke point suitable for tadka, sautéing, parathas, and shallow frying. Sesame oil reaches ~177°C. Both cover the full range of everyday Indian cooking at medium heat.

This is the most common question we receive and the answer is important: cloudiness and fine sediment are signs of purity, not contamination. After cold pressing, our oil settles naturally for 72 hours no centrifuges, no filter aids. Fine seed particles remain suspended and create a slight haze. Crystal-clear cold-pressed oil has been filtered; ours has not. Gently warm or shake before use, or refrigerate to settle further. Either way, you are consuming exactly what came out of the press.
